Ingredients

Whole chicken

Chicken fat or vegetable oil

Cucumber

Instructions

  1. Fill a large pot with water and bring it to a boil. Add the chicken, ginger slices, minced garlic, and native peppers. Let it simmer for about 30-40 minutes until the chicken is thoroughly cooked.
  2. After the chicken is cooked, remove it from the pot and plunge it into a bowl of ice water. This will stop the cooking process and give the chicken a firmer texture. Reserve the broth for the rice.
  3. Rub the chicken skin with chicken fat or vegetable oil, then drizzle it with soy sauce and sesame oil. Set it aside to marinate and absorb the flavors.
  4. In a saucepan, heat the chicken fat or vegetable oil. Add the rice and stir-fry until it's well coated with the oil. This will give your rice a beautiful, glossy finish.
  5. Transfer the stir-fried rice into a rice cooker and pour in 4 cups of the spicy chicken broth. Cook the rice according to the appliance's instructions.
