Hainanese Chicken Rice

Hailing from the Hainan province of southern China, this dish voyaged through the seas with Chinese immigrants and found a new home in the cuisines of Malaysia and Singapore. - Whole chicken

- Chicken fat or vegetable oil

- 2 cups
- Cucumber
- 1, sliced
- Coriander leaves

Instructions
- Fill a large pot with water and bring it to a boil. Add the chicken, ginger slices, minced garlic, and native peppers. Let it simmer for about 30-40 minutes until the chicken is thoroughly cooked.
- After the chicken is cooked, remove it from the pot and plunge it into a bowl of ice water. This will stop the cooking process and give the chicken a firmer texture. Reserve the broth for the rice.
- Rub the chicken skin with chicken fat or vegetable oil, then drizzle it with soy sauce and sesame oil. Set it aside to marinate and absorb the flavors.
- In a saucepan, heat the chicken fat or vegetable oil. Add the rice and stir-fry until it's well coated with the oil. This will give your rice a beautiful, glossy finish.
- Transfer the stir-fried rice into a rice cooker and pour in 4 cups of the spicy chicken broth. Cook the rice according to the appliance's instructions.
- Once the rice is ready, fluff it up with a fork and let it rest for a few minutes. This will allow the grains to separate and the flavors to mingle.
