Instructions
- Preheat the oven to 400°F (200°C).
- Arrange the cherry tomatoes on a baking sheet. Drizzle with one tablespoon of olive oil, and season with salt and pepper. Roast for 15-20 minutes, or until the tomatoes are soft and slightly caramelized.
- While the tomatoes are roasting, cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
- Season the halibut fillets with salt and pepper. In a large skillet, heat one tablespoon of olive oil over medium-high heat. Add the halibut and cook for 3-4 minutes per side, until golden brown and cooked through. Remove the fillets from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil, minced garlic, and red pepper flakes. Sauté for 1-2 minutes, until the garlic is fragrant.
- Stir in the roasted cherry tomatoes, and cook for another 2-3 minutes until heated through.
- Add the cooked pasta to the skillet, tossing to coat in the tomato-garlic sauce. Cook for an additional 1-2 minutes until everything is well combined and heated through.
- Divide the pasta among serving plates. Top each serving with a halibut fillet, a sprinkle of freshly grated Parmesan cheese, and a scattering of fresh basil.
- Serve immediately and enjoy the taste of Italy!
Tips
- For an extra burst of flavor, you can add a splash of white wine to the garlic and red pepper flakes before adding the tomatoes.
- Try substituting the halibut with another firm white fish like cod or haddock if desired.
- To ensure your halibut is cooked perfectly, it should flake easily with a fork and be opaque in the center.
