Crispy Halibut BLT Sandwich

Ingredients
- Halibut fillets
- 2 (6-ounce) fillets
- Bacon
- 4 slices
- Lettuce
- 2 leaves, preferably romaine or butter lettuce
- Tomato
- 1 medium, sliced
- Bread
- 4 slices (your choice: sourdough, whole grain, or white)
- Salt

- Garlic powder
- 1 teaspoon
- Lemon juice
- 1 tablespoon
- Mayonnaise
- 1/4 cup
- Olive oil

Instructions
- Preheat the oven to 400°F (200°C).
- Season the halibut fillets generously with salt, black pepper, and garlic powder on both sides.
- In a skillet over medium-high heat, add a drizzle of olive oil. Once hot, carefully place the halibut fillets in the skillet. Cook for 3-4 minutes per side, until they are golden brown and cooked through, reaching an internal temperature of 145°F (63°C).
- While the halibut is cooking, in a small bowl, combine mayonnaise, lemon juice, garlic powder, salt, and pepper to create the aioli sauce. Mix until smooth and set aside.
- In another skillet, cook the bacon until crispy. Once cooked, place the bacon on a paper towel to drain excess fat.
- Toast the bread slices in the oven until lightly golden and crispy, about 5-7 minutes.
- Spread a generous layer of the aioli sauce on one side of each toasted bread slice.
- On two slices of bread, layer the lettuce, tomato slices, the cooked halibut fillets, and crispy bacon.
- Top with the remaining slices of bread, aioli side down, to complete the sandwiches.
- Slice the sandwiches in half diagonally and serve immediately.
Tips
- For an extra crunch, add sliced avocado or pickles to the sandwich.
- You can substitute halibut with another white fish like cod or tilapia if desired.
- If you prefer a spicier kick, add a dash of hot sauce or a pinch of cayenne pepper to the aioli.
