Ingredients

Halibut fillets
2 (6-ounce) fillets
Bacon
4 slices
Lettuce
2 leaves, preferably romaine or butter lettuce
Tomato
1 medium, sliced
Bread
4 slices (your choice: sourdough, whole grain, or white)
Salt
to taste
Black pepper
to taste
Garlic powder
1 teaspoon
Lemon juice
1 tablespoon
Mayonnaise
1/4 cup
Olive oil
for cooking

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the halibut fillets generously with salt, black pepper, and garlic powder on both sides.
  3. In a skillet over medium-high heat, add a drizzle of olive oil. Once hot, carefully place the halibut fillets in the skillet. Cook for 3-4 minutes per side, until they are golden brown and cooked through, reaching an internal temperature of 145°F (63°C).
  4. While the halibut is cooking, in a small bowl, combine mayonnaise, lemon juice, garlic powder, salt, and pepper to create the aioli sauce. Mix until smooth and set aside.
  5. In another skillet, cook the bacon until crispy. Once cooked, place the bacon on a paper towel to drain excess fat.
  6. Toast the bread slices in the oven until lightly golden and crispy, about 5-7 minutes.
  7. Spread a generous layer of the aioli sauce on one side of each toasted bread slice.
  8. On two slices of bread, layer the lettuce, tomato slices, the cooked halibut fillets, and crispy bacon.
  9. Top with the remaining slices of bread, aioli side down, to complete the sandwiches.
  10. Slice the sandwiches in half diagonally and serve immediately.
