All-purpose flour

2 teaspoons
Salt
1/2 teaspoon
Unsalted butter
1/2 cup, softened
Granulated sugar
1 cup
Eggs
2 large
Milk
1/2 cup
Vanilla extract
1 teaspoon
Powdered sugar
1 cup (for glaze)
Lemon juice
2 tablespoons (for glaze)
Fresh berries
1 cup (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened unsalted butter and granulated sugar using an electric mixer on medium speed until the mixture is light and fluffy, about 3-5 minutes.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract until well combined.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and finish with the dry ingredients. Mix until just combined, being careful not to overmix.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for about 10 minutes.
  8. Carefully transfer the cake to a wire rack to cool completely.
  9. While the cake cools, prepare the lemon glaze by whisking together the powdered sugar and lemon juice in a small bowl until smooth.
