Harira
Harira is a soul-warming Moroccan soup, celebrated for its deep flavors and hearty ingredients. This traditional dish is a staple during Ramadan, often enjoyed to break the fast. Ingredients
- 2 tablespoons Olive oil
- 1, finely chopped Onion
- 2 cloves, minced Garlic
- 2 stalks, chopped Celery
- 1, diced Carrot
- 2, diced Tomatoes
- 2 tablespoons Tomato paste
- 1 cup, rinsed Red lentils
- 1 cup, cooked or canned, drained Chickpeas
- 1/2 cup, chopped Cilantro
- 1/2 cup, chopped Parsley
- 1 teaspoon Cumin
- 1 teaspoon Turmeric
- 1/2 teaspoon Cinnamon
- to taste Salt

- 6 cups Water
- 1, juiced Lemon

Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Stir in the chopped celery and diced carrot, cooking for an additional 2 minutes until the vegetables are tender.
- Add the rinsed red lentils, cooked chickpeas, diced tomatoes, tomato paste, chopped cilantro, chopped parsley, turmeric, cumin, cinnamon, salt, and pepper. Mix well to combine all the ingredients.
- Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 45 minutes, stirring occasionally, until the lentils are tender and the soup has thickened slightly.
- Before serving, stir in the lemon juice and taste for seasoning, adjusting salt and pepper as needed.
- Serve hot, garnished with additional cilantro or parsley if desired.
Tips
- For a heartier version, you can add diced potatoes or zucchini.
- For an extra kick, add a pinch of cayenne pepper or a dash of harissa.
