Harira is a soul-warming Moroccan soup, celebrated for its deep flavors and hearty ingredients. This traditional dish is a staple during Ramadan, often enjoyed to break the fast. Rich in lentils, chickpeas, and vibrant spices, Harira is not only nourishing but also embodies the spirit of community and hospitality. Serves 6

Ingredients

Olive oil
2 tablespoons
Onion
1, finely chopped
Garlic
2 cloves, minced
Celery
2 stalks, chopped
Carrot
1, diced
Tomatoes
2, diced
Tomato paste
2 tablespoons
Red lentils
1 cup, rinsed
Chickpeas
1 cup, cooked or canned, drained
Cilantro
1/2 cup, chopped
Parsley
1/2 cup, chopped
Cumin
1 teaspoon
Turmeric
1 teaspoon
Cinnamon
1/2 teaspoon
Salt
to taste
Pepper
to taste
Water
6 cups
Lemon
1, juiced

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
  3. Stir in the chopped celery and diced carrot, cooking for an additional 2 minutes until the vegetables are tender.
  4. Add the rinsed red lentils, cooked chickpeas, diced tomatoes, tomato paste, chopped cilantro, chopped parsley, turmeric, cumin, cinnamon, salt, and pepper. Mix well to combine all the ingredients.
  5. Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 45 minutes, stirring occasionally, until the lentils are tender and the soup has thickened slightly.
  6. Before serving, stir in the lemon juice and taste for seasoning, adjusting salt and pepper as needed.
  7. Serve hot, garnished with additional cilantro or parsley if desired.
