Servings: 4

Ingredients

Hemp seeds
1 cup
Rolled oats
1 cup
Eggs
2 large
Green onions
1/2 cup, chopped
Garlic
2 cloves, minced
Olive oil
3 tablespoons (for frying)
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Greek yogurt
1 cup (for dipping sauce)
Lemon juice
1 tablespoon
Fresh dill
2 tablespoons, chopped

Instructions

  1. In a large mixing bowl, combine the hemp seeds, rolled oats, eggs, chopped green onions, minced garlic, salt, and black pepper. Stir well until all ingredients are thoroughly incorporated.
  2. Heat the olive oil in a large skillet over medium heat. To test if the oil is hot enough, drop a small amount of the fritter mixture into the pan; it should sizzle immediately.
  3. Using your hands, form the mixture into small patties, approximately 2-3 inches in diameter, and carefully place them in the skillet. Be sure not to overcrowd the skillet; you may need to cook in batches.
  4. Cook each fritter for about 5 minutes on each side, or until they are golden brown and crispy. Adjust the heat as necessary to prevent burning.
  5. While the fritters are cooking, prepare the dipping sauce by mixing the Greek yogurt, lemon juice, and chopped dill in a small bowl. Season with salt and pepper to taste.
  6. Once cooked, transfer the fritters to a paper towel-lined plate to drain any excess oil.
  7. Serve the fritters warm, accompanied by the refreshing dill yogurt dipping sauce on the side.
