Servings: 4

Ingredients

All-purpose flour
2 cups
White sugar
2 tablespoons
Baking powder
1 tablespoon
Salt
1/4 teaspoon
Warm water
3/4 cup
Vegetable oil
for greasing the pan
Brown sugar
1/2 cup
Cinnamon
1 teaspoon
Chopped walnuts
1/4 cup

Instructions

  1. In a mixing bowl, combine the all-purpose flour, white sugar, baking powder, and salt. Mix well to ensure even distribution of dry ingredients.
  2. Gradually add the warm water to the dry ingredients, stirring continuously until a smooth batter forms. The batter should be thick but pourable.
  3. Cover the bowl with a clean kitchen towel and let the batter rest for 10 minutes. This allows the gluten to relax, resulting in a better texture.
  4. In a separate bowl, mix together the brown sugar, cinnamon, and chopped walnuts to make the filling. Set aside.
  5. Heat a non-stick pan or griddle over medium heat and lightly grease with vegetable oil to prevent sticking.
  6. Pour a ladleful of the pancake batter onto the pan and gently spread it into a circle about 4-5 inches wide.
  7. Sprinkle a generous amount of the cinnamon-brown sugar filling onto the center of the pancake.
  8. Cover the filling with a little more batter to seal it, ensuring the filling is enclosed.
  9. Cook the pancake for 2-3 minutes on each side, or until golden brown and crispy. Be careful when flipping to maintain the filling inside.
  10. Repeat the process with the remaining batter and filling, adding more oil to the pan as needed.
  11. Serve the Hodeok warm, ideally drizzled with a little extra honey or maple syrup for added sweetness.
