Ingredients
- Egg yolks
- 3 large
- Lemon juice
- 1 tablespoon, freshly squeezed
- Salt
- 1/4 teaspoon
- Cayenne pepper

- Unsalted butter
- 1/2 cup (1 stick), melted
Instructions
- In a heatproof bowl, whisk together the egg yolks, lemon juice, salt, and cayenne pepper until well combined.
- Place the bowl over a pot of simmering water (the bottom of the bowl should not touch the water) to create a gentle heat source.
- While whisking continuously, slowly drizzle in the melted butter. This slow incorporation is critical for emulsifying the sauce.
- Continue whisking until the sauce thickens and becomes glossy, about 5-7 minutes. It should coat the back of a spoon.
- Remove the bowl from the heat and whisk for an additional minute to cool the sauce slightly and achieve the desired consistency.
- Serve immediately for the best flavor and texture, or keep it warm in a thermos or double boiler until ready to use.
