Instructions
- Start by preparing the soft-boiled eggs: Bring a small pot of water to a boil. Gently add the eggs and boil for 6-7 minutes for a slightly runny yolk. Remove them from the pot and place them in an ice bath to stop the cooking process. Once cool, peel and set aside.
- In a large pot, combine the chicken broth, soy sauce, mirin, sake, brown sugar, minced garlic, and grated ginger. Bring the mixture to a boil over medium-high heat, then reduce the heat and let it simmer for 30 minutes to allow the flavors to meld.
- Strain the broth through a fine-mesh sieve to remove the solids, then return the liquid to the pot. Add the sliced shiitake mushrooms, julienned carrots, and chopped bok choy. Simmer for an additional 10 minutes, or until the vegetables are tender.
- While the broth is simmering, cook the ramen noodles according to the package instructions. Drain and set aside.
- To serve, divide the cooked ramen noodles among four bowls. Ladle the hot broth and vegetables over the noodles.
