Homemade Ramen

This homemade ramen recipe is made with a savory broth, fresh veggies, and tender noodles.

Ingredients

  • Soft boiled eggs (4)
  • Green onions (4, thinly sliced)
  • Ramen noodles (12 ounces)
  • Bok choy (2 heads, chopped)
  • Carrots (2, peeled and sliced)
  • Shiitake mushrooms (4 ounces, sliced)
  • Ginger (1 tablespoon, grated)
  • Garlic (4 cloves, minced)
  • Brown sugar (2 tablespoons)
  • Sake (1/4 cup)
  • Mirin (1/4 cup)
  • Soy sauce (1/4 cup)
  • Chicken broth (6 cups)

Instructions

  1. In a large pot, combine the chicken broth, soy sauce, mirin, sake, brown sugar, garlic, and ginger. Bring to a boil, then reduce the heat and simmer for 30 minutes.
  2. Strain the broth and return it to the pot. Add the shiitake mushrooms, carrots, and bok choy. Simmer for 10 minutes, or until the veggies are tender.
  3. Cook the ramen noodles according to package instructions.
  4. Divide the noodles among four bowls. Ladle the broth and veggies over the noodles.
  5. Top each bowl with sliced green onions and a soft boiled egg.
