Homemade Ravioli

Homemade Ravioli

Delicious homemade ravioli stuffed with ricotta cheese and spinach, served with a simple tomato sauce.

Ingredients

  • Basil (1/4 cup, chopped)
  • Tomato sauce (2 cups)
  • Garlic (2 cloves, minced)
  • Parmesan cheese (1/2 cup, grated)
  • Spinach (1 cup, cooked and chopped)
  • Ricotta cheese (1 cup)
  • Salt (1/2 teaspoon)
  • Olive oil (1 tablespoon)
  • Eggs (3 large)
  • All (purpose flour - 2 cups)

Instructions

  1. In a large bowl, combine the flour, eggs, olive oil, and salt. Mix until a dough forms.
  2. Knead the dough on a floured surface for 10 minutes, or until smooth and elastic. Cover with plastic wrap and let rest for 30 minutes.
  3. In a separate bowl, mix together the ricotta cheese, spinach, Parmesan cheese, and garlic.
  4. Roll out the dough on a floured surface until it is thin enough to see through. Cut the dough into 2-inch squares.
  5. Place a small spoonful of the ricotta mixture in the center of each square. Fold the square in half to form a triangle, then press the edges together to seal.
  6. Bring a large pot of salted water to a boil. Add the ravioli and cook for 2-3 minutes, or until they float to the surface.
  7. In a separate pot, heat the tomato sauce over medium heat. Add the basil and stir to combine.
  8. Serve the ravioli with the tomato sauce on top.
