
Homemade Ravioli
Delicious homemade ravioli stuffed with ricotta cheese and spinach, served with a simple tomato sauce.
Ingredients
- Basil (1/4 cup, chopped)
- Tomato sauce (2 cups)
- Garlic (2 cloves, minced)
- Parmesan cheese (1/2 cup, grated)
- Spinach (1 cup, cooked and chopped)
- Ricotta cheese (1 cup)
- Salt (1/2 teaspoon)
- Olive oil (1 tablespoon)
- Eggs (3 large)
- All (purpose flour - 2 cups)
Instructions
- In a large bowl, combine the flour, eggs, olive oil, and salt. Mix until a dough forms.
- Knead the dough on a floured surface for 10 minutes, or until smooth and elastic. Cover with plastic wrap and let rest for 30 minutes.
- In a separate bowl, mix together the ricotta cheese, spinach, Parmesan cheese, and garlic.
- Roll out the dough on a floured surface until it is thin enough to see through. Cut the dough into 2-inch squares.
- Place a small spoonful of the ricotta mixture in the center of each square. Fold the square in half to form a triangle, then press the edges together to seal.
- Bring a large pot of salted water to a boil. Add the ravioli and cook for 2-3 minutes, or until they float to the surface.
- In a separate pot, heat the tomato sauce over medium heat. Add the basil and stir to combine.
- Serve the ravioli with the tomato sauce on top.
