Servings: 4

Ingredients

  • Acorn squash (1 medium)
  • Butter (4 tablespoons, unsalted)
  • Honey (3 tablespoons)
  • Salt (1/2 teaspoon, to taste)
  • Black pepper (1/4 teaspoon, freshly ground)
  • Cinnamon (1/2 teaspoon (optional, for added warmth))

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the acorn squash in half lengthwise and scoop out the seeds using a spoon. For easier cutting, you can microwave the squash for 2-3 minutes to soften it slightly.
  3. In a small saucepan, melt the unsalted butter and honey together over medium heat until fully combined. Add the optional cinnamon for an extra layer of flavor, if desired.
  4. Brush the honey butter mixture generously over the cut sides of the squash, ensuring an even coating. Sprinkle with salt and freshly ground black pepper.
  5. Place the squash halves cut side down on a baking sheet lined with parchment paper for easy cleanup. Roast in the preheated oven for 30 minutes.
  6. After 30 minutes, carefully flip the squash halves cut side up. Brush with any remaining honey butter mixture and roast for an additional 15 minutes, or until the squash is tender and caramelized.
  7. Remove from oven and let cool slightly before serving. Enjoy this delicious dish warm as a side to your favorite protein or grain.
