Ingredients
- Green onions (2, sliced, for garnish)
- Cooked rice (4 cups, for serving)
- Salt and pepper (to taste)
- Vegetable oil (2 tablespoons)
- Ginger (1 teaspoon, grated)
- Garlic (3 cloves, minced)
- Soy sauce (2 tablespoons)
- Dijon mustard (2 tablespoons)
- Honey (2 tablespoons)
- Carrots (2, sliced)
- Bell peppers (2, sliced)
- Broccoli florets (2 cups)
- Chicken breast (2, boneless and skinless, cut into strips)
Instructions
- In a small bowl, whisk together the honey, Dijon mustard, soy sauce, minced garlic, and grated ginger to make the honey mustard sauce.
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the chicken strips to the skillet and season with salt and pepper. Cook until browned and cooked through, about 5-6 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the broccoli florets, sliced bell peppers, and sliced carrots. Stir fry for 3-4 minutes, or until the vegetables are crisp-tender.
- Return the cooked chicken to the skillet and pour the honey mustard sauce over the chicken and vegetables. Stir to coat everything evenly.
- Cook for an additional 2-3 minutes, or until the sauce has thickened slightly.
