Hotteok: Korean Sweet and Savory Pancakes

Instructions
- In a large mixing bowl, combine the all-purpose flour, yeast, sugar, and salt.
- Gradually pour in the warm water while continuously stirring until a sticky dough is formed.
- Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 1 hour, or until it doubles in size.
- While the dough is rising, prepare the filling by mixing together the brown sugar, cinnamon, and chopped nuts in a separate bowl.
- Once the dough has risen, divide it into 8 equal portions. Flatten each portion with your hands.
- Spoon a generous amount of the brown sugar mixture onto the center of each flattened dough portion.
- Gather the edges of the dough and pinch them together to seal the filling inside. This should form a round, filled dough ball.
- Heat the vegetable oil in a non-stick skillet over medium heat.
- Carefully place the filled dough balls in the skillet and gently flatten them with a spatula.
- Cook the hotteok for 2-3 minutes on each side, or until they are golden brown and crispy.
- Serve the Hotteok hot, allowing the warm, sweet filling to be fully savored. Enjoy!
