Huaraches

Instructions
- In a large bowl, combine the masa harina and 1 cup of water. Mix with your hands or a spoon until a soft, pliable dough forms. If the dough is too dry, gradually add more water, one tablespoon at a time, until the desired consistency is reached.
- Divide the dough into 4 equal portions and shape each portion into an oval-shaped disk, roughly 1/2 inch thick.
- Heat a skillet or griddle over medium heat. Cook each masa disk for about 2-3 minutes on each side, until lightly browned and cooked through.
- In a separate frying pan, heat the vegetable oil over medium heat. Carefully fry the masa disks one at a time until they puff up and become crispy, about 2 minutes per side. Drain on paper towels to remove excess oil.
- Spread a generous layer of refried beans on each huarache.
- Top with your choice of cooked meat, followed by crumbled cheese, shredded lettuce, diced tomatoes, diced onion, chopped cilantro, and avocado slices.
