Ingredients

Olive oil
2 tablespoons
Onion
1 medium, diced
Red bell pepper
1 medium, diced
Garlic
2 cloves, minced
Chorizo
150g, sliced
Tomatoes
2 medium, diced
Peas
1 cup, fresh or frozen
Paprika
1 teaspoon, smoked or sweet
Salt
to taste
Black pepper
to taste
Eggs
4 large
Fresh parsley
2 tablespoons, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced onion and red bell pepper, cooking until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the sliced chorizo to the skillet and cook until browned, about 5 minutes.
  5. Stir in the diced tomatoes, peas, paprika, salt, and pepper. Cook for another 5 minutes, allowing the flavors to meld.
  6. Create four wells in the mixture and carefully crack an egg into each well.
  7. Cover the skillet with a lid and cook until the eggs are set to your liking, about 5-7 minutes for medium eggs.
  8. Remove from heat and sprinkle with fresh parsley before serving.
