Ingredients
- Olive oil
- 2 tablespoons
- Onion
- 1 medium, diced
- Red bell pepper
- 1 medium, diced
- Garlic
- 2 cloves, minced
- Chorizo
- 150g, sliced
- Tomatoes
- 2 medium, diced
- Peas
- 1 cup, fresh or frozen
- Paprika
- 1 teaspoon, smoked or sweet
- Salt
- to taste
- Black pepper
- to taste
- Eggs
- 4 large
- Fresh parsley
- 2 tablespoons, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and red bell pepper, cooking until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the sliced chorizo to the skillet and cook until browned, about 5 minutes.
- Stir in the diced tomatoes, peas, paprika, salt, and pepper. Cook for another 5 minutes, allowing the flavors to meld.
- Create four wells in the mixture and carefully crack an egg into each well.
- Cover the skillet with a lid and cook until the eggs are set to your liking, about 5-7 minutes for medium eggs.
- Remove from heat and sprinkle with fresh parsley before serving.
