- Eggs
- 6 large
- Onion
- 1 small, diced
- Bell pepper
- 1 small, diced (any color)
- Garlic
- 2 cloves, minced
- Fresh cilantro
- 1/4 cup, chopped
- Salt
- to taste
- Black pepper
- to taste
- Tortillas
- 4, warmed (corn or flour)
Instructions
- In a skillet over medium heat, cook the chorizo sausage until browned and cooked through, about 5-7 minutes. Break it apart with a spatula as it cooks. Once done, remove from the skillet and set aside.
- In the same skillet, add the diced onion, bell pepper, and minced garlic. Sauté until the vegetables are softened and fragrant, about 5 minutes.
- In a medium bowl, whisk together the eggs with a pinch of salt and black pepper until well combined.
- Pour the eggs into the skillet with the cooked vegetables. Allow the eggs to sit for a few moments before gently stirring with a spatula. Cook until the eggs are scrambled and cooked to your desired doneness.
- Add the cooked chorizo back into the skillet and stir to combine with the eggs and vegetables, heating everything through for an additional minute.
- Remove from heat and sprinkle fresh cilantro over the scrambled eggs and chorizo mixture.
- Serve the huevos con chorizo immediately with warmed tortillas on the side for scooping.
Tips
- For a spicier version, consider using hot chorizo or adding sliced jalapeños during the cooking process.
- Serve with avocado slices or a dollop of sour cream for added creaminess.
- Feel free to customize the dish by adding other vegetables like spinach or tomatoes.
