Ingredients

Chorizo sausage
8 ounces, casings removed
Eggs
6 large
Onion
1 small, diced
Bell pepper
1 small, diced (any color)
Garlic
2 cloves, minced
Fresh cilantro
1/4 cup, chopped
Salt
to taste
Black pepper
to taste
Tortillas
4, warmed (corn or flour)

Instructions

  1. In a skillet over medium heat, cook the chorizo sausage until browned and cooked through, about 5-7 minutes. Break it apart with a spatula as it cooks. Once done, remove from the skillet and set aside.
  2. In the same skillet, add the diced onion, bell pepper, and minced garlic. Sauté until the vegetables are softened and fragrant, about 5 minutes.
