Huevos Rancheros Ticos

Ingredients

Salt

Black pepper

Fresh cilantro
1/4 cup, chopped
Salsa
1 cup, store-bought or homemade
Corn tortillas
4-6, depending on size
Eggs
4, large
Canned black beans
1 can (15 oz), drained and rinsed
Red bell pepper
1, diced
Garlic
2 cloves, minced
Onion
1, diced
Olive oil
2 tablespoons

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion, minced garlic, and diced red bell pepper. Sauté until softened, about 5 minutes.
  2. Add the drained black beans to the skillet and cook until heated through, about another 5 minutes. Season with salt and pepper to taste.
  3. In a separate skillet, fry the eggs to your desired level of doneness (sunny-side up, over-easy, etc.).
  4. While the eggs are frying, heat the corn tortillas in a dry skillet over medium heat until warm and pliable, about 1-2 minutes per side.
  5. To serve, place a warm tortilla on each plate. Top with a generous scoop of the black bean mixture, followed by a fried egg.
  6. Add a spoonful of salsa over the egg and garnish with chopped cilantro. Season with additional salt and pepper as desired.
