Huevos Rancheros Ticos

- 1/4 cup, chopped Fresh cilantro
- 1 cup, store-bought or homemade Salsa
- 4-6, depending on size Corn tortillas
- 4, large Eggs
- 1 can (15 oz), drained and rinsed Canned black beans
- 1, diced Red bell pepper
- 2 cloves, minced Garlic
- 1, diced Onion
- 2 tablespoons Olive oil

Instructions
- Heat the olive oil in a large skillet over medium heat. Add the diced onion, minced garlic, and diced red bell pepper. Sauté until softened, about 5 minutes.
- Add the drained black beans to the skillet and cook until heated through, about another 5 minutes. Season with salt and pepper to taste.
- In a separate skillet, fry the eggs to your desired level of doneness (sunny-side up, over-easy, etc.).
- While the eggs are frying, heat the corn tortillas in a dry skillet over medium heat until warm and pliable, about 1-2 minutes per side.
- To serve, place a warm tortilla on each plate. Top with a generous scoop of the black bean mixture, followed by a fried egg.
- Add a spoonful of salsa over the egg and garnish with chopped cilantro. Season with additional salt and pepper as desired.
Tips
- For a spicier kick, add sliced jalapeños to the sautéed vegetables.
- Serve with slices of avocado or a dollop of sour cream for added creaminess.
- Feel free to substitute the black beans with pinto beans or refried beans if preferred.
