Instructions
- Place the eggs in a pot of cold water, making sure they are fully submerged. Bring the water to a boil over medium-high heat.
- Once boiling, reduce the heat to low and let the eggs simmer for 10 minutes.
- Remove the pot from heat and transfer the eggs to a bowl of ice water to cool for at least 5 minutes, making them easier to peel.
- Carefully peel the cooled eggs and slice them in half lengthwise. Gently remove the yolks and place them in a mixing bowl.
- To the yolks, add the mayonnaise, Dijon mustard, salt, black pepper, and paprika. Mash the mixture together with a fork until smooth and well combined.
- Spoon or pipe the yolk mixture back into the hollowed egg whites, filling each half generously.
- Garnish the filled eggs with a sprinkle of paprika and chopped chives for a touch of color and flavor.
- Serve chilled or at room temperature, and enjoy this classic tapas treat!
Tips
- For a twist, try adding a dash of hot sauce or chopped jalapeños to the yolk mixture for a spicy kick.
- Experiment with different herbs like dill or parsley for a unique flavor profile.
- For a lighter version, substitute Greek yogurt for half of the mayonnaise.
