Huevos Rellenos (Deviled Eggs)

Ingredients
- Eggs (6 large)
- Mayonnaise (1/4 cup)
- Dijon mustard (1 tablespoon)
- Salt (1/4 teaspoon)
- Black pepper (1/4 teaspoon)
- Paprika (1 teaspoon, plus extra for garnish)
- Chives (2 tablespoons, finely chopped)
Instructions
- Place the eggs in a pot of cold water, making sure they are fully submerged. Bring the water to a boil over medium-high heat.
- Once boiling, reduce the heat to low and let the eggs simmer for 10 minutes.
- Remove the pot from heat and transfer the eggs to a bowl of ice water to cool for at least 5 minutes, making them easier to peel.
- Carefully peel the cooled eggs and slice them in half lengthwise. Gently remove the yolks and place them in a mixing bowl.
- To the yolks, add the mayonnaise, Dijon mustard, salt, black pepper, and paprika. Mash the mixture together with a fork until smooth and well combined.
- Spoon or pipe the yolk mixture back into the hollowed egg whites, filling each half generously.
