Ingredients

Original recipe serves 6

Eggs
6 large
Mayonnaise
1/4 cup
Dijon mustard
1 tablespoon
Salt
1/4 teaspoon
Black pepper
1/4 teaspoon
Paprika
1 teaspoon, plus extra for garnish
Chives
2 tablespoons, finely chopped

Instructions

  1. Place the eggs in a pot of cold water, making sure they are fully submerged. Bring the water to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low and let the eggs simmer for 10 minutes.
  3. Remove the pot from heat and transfer the eggs to a bowl of ice water to cool for at least 5 minutes, making them easier to peel.
  4. Carefully peel the cooled eggs and slice them in half lengthwise. Gently remove the yolks and place them in a mixing bowl.
  5. To the yolks, add the mayonnaise, Dijon mustard, salt, black pepper, and paprika. Mash the mixture together with a fork until smooth and well combined.
  6. Spoon or pipe the yolk mixture back into the hollowed egg whites, filling each half generously.
  7. Garnish the filled eggs with a sprinkle of paprika and chopped chives for a touch of color and flavor.
  8. Serve chilled or at room temperature, and enjoy this classic tapas treat!
