Ingredients
- Olive oil
- 4 tablespoons
- Potatoes
- 4 medium, peeled and thinly sliced
- Salt

- Cured ham
- 100g, thinly sliced
- Eggs
- 4 large
- Fresh parsley
- for garnish, chopped
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the sliced potatoes to the skillet and cook until they are golden brown and crispy, about 10 minutes. Season with salt and black pepper to taste.
- Once the potatoes are cooked, remove them from the skillet and set them aside on a serving plate.
- In the same skillet, add the remaining 2 tablespoons of olive oil.
- Carefully crack the eggs into the skillet, taking care not to break the yolks. Cook until the whites are set but the yolks remain runny, about 3-4 minutes.
- Place the crispy fried potatoes on a serving plate.
