Ingredients

Olive oil
4 tablespoons
Potatoes
4 medium, peeled and thinly sliced
Salt
to taste
Black pepper
to taste
Cured ham
100g, thinly sliced
Eggs
4 large
Fresh parsley
for garnish, chopped

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add the sliced potatoes to the skillet and cook until they are golden brown and crispy, about 10 minutes. Season with salt and black pepper to taste.
  3. Once the potatoes are cooked, remove them from the skillet and set them aside on a serving plate.
  4. In the same skillet, add the remaining 2 tablespoons of olive oil.
  5. Carefully crack the eggs into the skillet, taking care not to break the yolks. Cook until the whites are set but the yolks remain runny, about 3-4 minutes.
  6. Place the crispy fried potatoes on a serving plate.
  7. Top the potatoes generously with the fried eggs and arrange the sliced cured ham over the top.
