Southern Hush Puppies

Instructions
- In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Whisk until well blended.
- Stir in the finely chopped onion, buttermilk, and beaten egg until just combined. Be careful not to overmix; the batter should be slightly lumpy.
- In a deep fryer or large heavy pot, heat vegetable oil to 375°F (190°C). You can test the oil by dropping a small spoonful of batter into it; it should sizzle immediately.
- Using a rounded teaspoon, drop the batter into the hot oil, making sure not to overcrowd the pot. Fry in batches if necessary.
- Fry the hush puppies for about 2-3 minutes or until they are golden brown all over. Use a slotted spoon to turn them as needed for even cooking.
- Once cooked, remove the hush puppies from the oil and drain on paper towels to absorb excess oil.
- Serve warm with honey or your favorite dipping sauce, such as remoulade or a spicy aioli.
