Ingredients

Original recipe serves 4-6

Vegetable oil
for frying
All-purpose flour
1 cup
Cornmeal
1 cup
Sugar
1 tablespoon
Baking powder
1 tablespoon
Salt
1/2 teaspoon
Onion
1/2 cup, finely chopped
Egg
1, beaten
Buttermilk
1 cup

Instructions

  1. In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Whisk until well blended.
  2. Stir in the finely chopped onion, buttermilk, and beaten egg until just combined. Be careful not to overmix; the batter should be slightly lumpy.
  3. In a deep fryer or large heavy pot, heat vegetable oil to 375°F (190°C). You can test the oil by dropping a small spoonful of batter into it; it should sizzle immediately.
  4. Using a rounded teaspoon, drop the batter into the hot oil, making sure not to overcrowd the pot. Fry in batches if necessary.
  5. Fry the hush puppies for about 2-3 minutes or until they are golden brown all over. Use a slotted spoon to turn them as needed for even cooking.
  6. Once cooked, remove the hush puppies from the oil and drain on paper towels to absorb excess oil.
  7. Serve warm with honey or your favorite dipping sauce, such as remoulade or a spicy aioli.
