Ingredients
- Ground beef
- 1 pound
- Onion
- 1 large, chopped
- Carrots
- 2 medium, diced
- Potatoes
- 2 medium, diced
- Garlic
- 3 cloves, minced
- Ginger
- 1 tablespoon, minced
- Beef broth
- 4 cups
- Soy sauce
- 2 tablespoons
- Egg noodles
- 8 ounces
- Cilantro
- 1/4 cup, chopped (for garnish)
- Green onions
- 1/4 cup, chopped (for garnish)
- Salt

- Black pepper

Instructions
- In a large pot, brown the ground beef over medium heat, breaking it up with a spoon as it cooks until it's no longer pink.
- Add the chopped onion, diced carrots, diced potatoes, minced garlic, and minced ginger. Cook for about 5 minutes, stirring occasionally, until the vegetables are slightly softened.
- Stir in the soy sauce and beef broth. Increase the heat to bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes, allowing the flavors to meld together.
- While the soup is simmering, cook the egg noodles according to package instructions until al dente. Drain and set aside.
- Season the soup with salt and pepper to taste, adjusting to your preference.
- To serve, divide the cooked egg noodles among bowls and ladle the hot soup over them.
- Garnish each bowl with freshly chopped green onions and cilantro.
