Hwae: Traditional Korean Fresh Fish Salad

Savor the refreshing taste of Hwae, a traditional Korean dish that serves as a delightful harmony of fresh raw fish and crisp vegetables, all tossed in a tangy, flavorful dressing. This dish has been cherished within Korean culture for centuries, often enjoyed during the summer months for its light and vibrant flavors. The raw fish fillets, thinly sliced and marinated, capture the essence of the sea while the various vegetables add a delightful crunch and a burst of refreshing flavors. The tangy dressing, a blend of staple Korean seasonings, beautifully brings together all the elements of this dish.

Serves 4

Ingredients

Fresh white fish fillets
2
Cucumber
1, thinly sliced
Carrot
1, julienned
Red onion
1, thinly sliced
Green onion
2 stalks, chopped
Lettuce leaves
8
Sesame oil
2 tablespoons
Soy sauce
3 tablespoons
Rice vinegar
1 tablespoon
Sugar
1 teaspoon
Red pepper flakes
1/2 teaspoon
Toasted sesame seeds
1 tablespoon

Instructions

  1. Slice the fresh white fish fillets into thin strips and place them in a large bowl.
  2. Add the thinly sliced cucumber, julienned carrot, sliced red onion, and chopped green onion to the bowl with the fish.
  3. In a separate small bowl, create the dressing by whisking together the sesame oil, soy sauce, rice vinegar, sugar, and red pepper flakes until well combined.
  4. Pour the dressing over the fish and vegetable mixture in the large bowl. Toss gently to ensure everything is evenly coated.
  5. Cover the bowl with plastic wrap and refrigerate for at least 10 minutes to allow the flavors to meld together. The longer it marinates, the more intense the flavors become.
  6. To serve, arrange the lettuce leaves on a plate. Spoon the hwae mixture onto the lettuce leaves, creating a lettuce wrap.
  7. Sprinkle the hwae with toasted sesame seeds for an added crunch and nutty flavor.
  8. Enjoy the refreshing and flavorful hwae as a light meal or appetizer!

Tips

  • 💡 For a spicier kick, add more red pepper flakes. You can also substitute white fish with other types of seafood like shrimp, scallops, or even octopus.
