Onions
2, medium, thinly sliced
Potatoes
4, medium, peeled and thinly sliced
Extra virgin olive oil

Instructions

  1. Heat the extra virgin olive oil in a large non-stick frying pan over medium heat.
  2. Add the thinly sliced potatoes and onions to the pan, spreading them evenly.
  3. Reduce the heat to medium-low, cover the pan, and cook the potatoes and onions, stirring occasionally, until they are soft and golden. This should take about 10-15 minutes.
  4. In the meantime, beat the eggs in a large bowl. Season with salt and pepper.
  5. Once the potatoes and onions are cooked, pour the beaten eggs over them in the pan, ensuring they are evenly distributed.
  6. Cook the omelette on one side until it's set, about 5-7 minutes.
  7. Carefully flip the omelette using a large plate and cook on the other side for another 5 minutes, or until it's fully cooked.
  8. Serve the Ibizan omelette hot, cut into wedges, with a side salad or freshly baked bread.
