Jicama Slaw

Experience a burst of fresh, vibrant flavors with this refreshing Jicama Slaw. This salad showcases a medley of crisp, colorful vegetables tossed in a tangy dressing. The sweet crunch of jicama, the vibrant carrots, the sharpness of red bell pepper, and the subtle heat of green onions, all come together under the fresh aromatic umbrella of cilantro. The tangy dressing, made with zesty lime juice, honey, and rice vinegar, binds all the flavors together. This slaw is a perfect side dish that provides a crunchy contrast to your main course.

Serves 4

Ingredients

Black pepper
1/4 teaspoon, freshly ground
Salt
1/2 teaspoon
Honey
2 tablespoons
Rice vinegar
1/4 cup
Lime juice
3 tablespoons, fresh
Cilantro
1/4 cup, chopped
Green onions
2, thinly sliced
Red bell pepper
1, thinly sliced
Carrots
2, julienned
Jicama
1 medium, julienned

Instructions

  1. In a large mixing bowl, combine the julienned jicama, carrots, thinly sliced red bell pepper, green onions, and chopped cilantro. Toss gently to mix.
  2. To prepare the dressing, in a separate bowl, whisk together the fresh lime juice, rice vinegar, honey, salt, and freshly ground black pepper until well combined and the honey is fully dissolved.
  3. Pour the tangy dressing over the mixed vegetables. Toss well to ensure the vegetables are evenly coated with the dressing.
  4. Cover the bowl and refrigerate for at least 30 minutes. This allows the flavors to meld together and the vegetables to absorb the dressing.
  5. Before serving, give the slaw a quick toss to refresh the flavors. Serve chilled as a side dish. Enjoy!

Tips

  • 💡 Variation: Add some shredded cabbage or thinly sliced radishes for extra crunch.
  • 💡 Tip: For best results, make sure to cut the vegetables in a similar size for even dressing distribution and a cohesive bite.
