Ingredients
- Black pepper
- 1/4 teaspoon, freshly ground

- Honey
- 2 tablespoons
- Rice vinegar

- Lime juice

- Cilantro
- 1/4 cup, chopped
- Green onions
- 2, thinly sliced
- Red bell pepper
- 1, thinly sliced
- Carrots
- 2, julienned
- Jicama
- 1 medium, julienned
Instructions
- In a large mixing bowl, combine the julienned jicama, carrots, thinly sliced red bell pepper, green onions, and chopped cilantro. Toss gently to mix.
- To prepare the dressing, in a separate bowl, whisk together the fresh lime juice, rice vinegar, honey, salt, and freshly ground black pepper until well combined and the honey is fully dissolved.
- Pour the tangy dressing over the mixed vegetables. Toss well to ensure the vegetables are evenly coated with the dressing.
- Cover the bowl and refrigerate for at least 30 minutes. This allows the flavors to meld together and the vegetables to absorb the dressing.
