Whether you're looking to cool off on a hot summer day or just need a sweet midday pick-me-up, these Ice Cream Cookie Sandwiches are the perfect homemade dessert.

Servings: 12

Ingredients

  • All-purpose flour (2 cups)
  • Baking soda (1 teaspoon)
  • Salt (1/2 teaspoon)
  • Unsalted butter, softened (1 cup)
  • Granulated sugar (3/4 cup)
  • Brown sugar (3/4 cup)
  • Egg (1)
  • Vanilla extract (2 teaspoons)
  • Your favorite ice cream (1 quart)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium-sized bowl, whisk together the all-purpose flour, baking soda, and salt. Set this aside.
  3. In a separate, larger bowl, cream together the softened butter, granulated sugar, and brown sugar. Mix these ingredients until they are light and fluffy.
  4. Beat in the egg and vanilla extract to your butter and sugar mixture. Make sure these are well combined before moving on to the next step.
  5. Gradually add your dry ingredients to the wet ingredients. Mix these together until just combined, being careful not to overmix.
  6. Drop rounded tablespoons of dough onto a baking sheet. Make sure to space them about 2 inches apart to allow for spreading.
  7. Bake your cookies for 8-10 minutes, or until the edges are a golden brown. Once done, remove from the oven.
  8. Let the cookies cool completely on a wire rack. This is an important step as the cookies need to be cool before adding the ice cream.
  9. Once the cookies are cooled, scoop a generous amount of your favorite ice cream onto the bottom side of one cookie.
  10. Place another cookie on top, pressing gently to create a sandwich. Repeat this process with the remaining cookies and ice cream.
  11. Serve your ice cream cookie sandwiches immediately for a delicious treat. If you want to save some for later, wrap each sandwich in plastic wrap and freeze.
