Serves 4

Ingredients

Rose syrup
1/4 cup
Gula Melaka syrup
1/4 cup
Evaporated milk
1/2 cup
Palm seeds
1/2 cup, drained
Grass jelly
1/2 cup, diced
Sweet corn
1/2 cup, cooked
Red beans
1/2 cup, cooked
Ice
4 cups, shaved

Instructions

  1. Prepare the toppings: Rinse and cook the red beans until tender, drain, and let cool. Cook the sweet corn until tender and cool. Dice the grass jelly into small cubes and drain the palm seeds.
  2. Shave the ice using an ice shaver or a blender until finely textured and fluffy.
  3. In a large serving bowl or individual cups, layer the shaved ice generously.
  4. Add a layer of sweet corn, red beans, diced grass jelly, and drained palm seeds on top of the ice. Repeat the layering process until all ingredients are used, finishing with a final layer of shaved ice.
  5. Drizzle the evaporated milk generously over the top of the dessert, followed by the Gula Melaka syrup and then the rose syrup to create a beautiful cascade of colors.
  6. Serve immediately with a spoon or straw, and enjoy the refreshing mix of flavors and textures!

Tips

  • 💡 For an extra touch of flavor, consider adding some fresh fruit like mango or lychee as toppings.
  • 💡 If you prefer a more intense sweetness, you can adjust the amount of Gula Melaka syrup to taste.
  • 💡 This dessert is best enjoyed fresh, so prepare it right before serving to maintain the ice's texture.
