Idiyappam, also known as string hoppers, is a delightful and traditional South Indian dish that features delicate, noodle-like strands made from rice flour. Ingredients

Rice flour
2 cups
Salt
1/2 teaspoon
Water
3/4 cup (or as needed)
Coconut milk
1 cup
Sugar
1 tablespoon (for sweet coconut milk)
Cardamom powder
1/4 teaspoon (optional, for sweet coconut milk)
Curry of your choice
to serve

Instructions

  1. In a large mixing bowl, combine the rice flour and salt. Mix well to ensure the salt is evenly distributed.
  2. Gradually add water to the rice flour mixture, a little at a time, and knead it into a soft, pliable dough. The dough should be smooth and not sticky. Adjust the water as needed.
  3. Divide the dough into small portions and shape each portion into cylindrical logs, ensuring they are uniform in size for even cooking.
  4. Grease the idiyappam maker or a steamer basket with oil to prevent sticking.
  5. Place one portion of the dough into the idiyappam maker and press it to form thin noodle-like strands onto a greased plate or steamer basket. Create a circular pattern to allow for even steaming.
  6. Repeat the process with the remaining dough portions until all the dough is used.
  7. Steam the idiyappam for about 10-12 minutes or until they are cooked and firm to the touch. Make sure to cover the steamer with a lid to retain steam.
  8. While the idiyappam is steaming, prepare the sweet coconut milk by combining the coconut milk, sugar, and cardamom powder in a small saucepan. Heat gently until the sugar dissolves, but do not boil.
  9. Once the idiyappam is ready, serve them hot with sweet coconut milk for a delightful treat or with your favorite spicy curry for a savory meal.
