Squid
2 medium, cleaned and whole
Vegetable oil
2 tablespoons, for brushing
Soy sauce
3 tablespoons
Mirin
2 tablespoons
Sugar
1 tablespoon
Bonito flakes
1/4 cup, for garnish
Green onions
2, finely chopped, for garnish

Instructions

  1. Preheat the grill or grill pan over medium-high heat.
  2. In a small bowl, combine soy sauce, mirin, and sugar. Stir until the sugar is dissolved to create a savory glaze.
  3. Brush the cleaned squid with vegetable oil to prevent sticking and enhance grilling.
  4. Place the squid on the grill and cook for about 2-3 minutes on each side, or until the squid is opaque and slightly charred.
  5. During the last minute of grilling, brush the prepared sauce over the squid, flipping it once to ensure both sides are evenly coated.
  6. Once cooked, remove the squid from the grill and let it rest for a minute.
  7. Slice the grilled squid into bite-sized pieces and arrange them on a serving platter.
  8. Garnish with chopped green onions and sprinkle bonito flakes generously over the top.
  9. Serve the ikayaki hot as a delicious appetizer or a main dish.
