Servings: 4

Ingredients

  • Vegetable oil (3 tablespoons)
  • Fresh cilantro (1/4 cup, chopped)
  • Salt (to taste)
  • Garam masala (1 teaspoon)
  • Coriander powder (1 teaspoon)
  • Cumin powder (1 teaspoon)
  • Turmeric powder (1/2 teaspoon)
  • Green chili (1, finely chopped)
  • Tomato (1 medium, chopped)
  • Ginger (1 inch, grated)
  • Garlic (3 cloves, minced)
  • Onion (1 medium, chopped)
  • Cauliflower (1 medium head, cut into florets)
  • Potatoes (2 medium, diced)

Instructions

  1. In a large pan, heat the vegetable oil over medium heat until shimmering.
  2. Add the chopped onion and sauté until golden brown, about 5-7 minutes. This step is crucial to develop a rich flavor base.
  3. Stir in the minced garlic, grated ginger, and chopped green chili. Sauté for another minute until fragrant, ensuring the flavors meld together.
  4. Add the turmeric powder, cumin powder, coriander powder, and garam masala. Mix well to combine and allow the spices to bloom for about 1-2 minutes, releasing their aromatic oils.
  5. Add the diced potatoes and cauliflower florets to the pan, stirring to coat them evenly with the spice mixture.
  6. Cover the pan with a lid and cook for about 15-20 minutes, stirring occasionally, until the potatoes and cauliflower are fork-tender.
  7. Incorporate the chopped tomatoes and season with salt to taste. Mix well and cook for an additional 5 minutes until the tomatoes soften and meld into the dish.
  8. Garnish with fresh cilantro before serving. Enjoy hot with rice or roti for a truly comforting meal.
