Cornmeal
1 cup
Milk
4 cups
Molasses
1/2 cup
Brown sugar
1/2 cup
Unsalted butter
3 tablespoons, melted
Salt
1/2 teaspoon
Ground cinnamon
1 teaspoon
Ground ginger
1/2 teaspoon
Ground nutmeg
1/4 teaspoon
Whipped cream
for serving

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium saucepan, combine the cornmeal and milk. Cook over medium heat, stirring constantly, until the mixture thickens and bubbles, about 10-15 minutes.
  3. Once thickened, remove the saucepan from the heat and stir in the molasses, brown sugar, melted butter, salt, cinnamon, ginger, and nutmeg until fully combined.
  4. Pour the mixture into a greased 2-quart baking dish, smoothing the top with a spatula.
  5. Bake in the preheated oven for about 2 hours, or until the pudding is set and has developed a golden brown crust on top.
  6. Remove from the oven and let cool slightly before serving. Spoon into bowls and top with a generous dollop of whipped cream.
