Enhanced Indian Pudding

Indian pudding is a beloved New England dessert that carries the warmth of tradition in every bite. This comforting dish, made with wholesome cornmeal, rich molasses, and fragrant spices, evokes the spirit of early American settlers. Often enjoyed during the colder months, this pudding is best served warm, topped with a generous dollop of whipped cream that melts into the sweet, spiced goodness below. A perfect way to celebrate the flavors of autumn!

Serves 8

Ingredients

Cornmeal
1 cup
Milk
4 cups
Molasses
1/2 cup
Brown sugar
1/2 cup
Unsalted butter
3 tablespoons, melted
Salt
1/2 teaspoon
Ground cinnamon
1 teaspoon
Ground ginger
1/2 teaspoon
Ground nutmeg
1/4 teaspoon
Whipped cream
for serving

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium saucepan, combine the cornmeal and milk. Cook over medium heat, stirring constantly, until the mixture thickens and bubbles, about 10-15 minutes.
  3. Once thickened, remove the saucepan from the heat and stir in the molasses, brown sugar, melted butter, salt, cinnamon, ginger, and nutmeg until fully combined.
  4. Pour the mixture into a greased 2-quart baking dish, smoothing the top with a spatula.
  5. Bake in the preheated oven for about 2 hours, or until the pudding is set and has developed a golden brown crust on top.
  6. Remove from the oven and let cool slightly before serving. Spoon into bowls and top with a generous dollop of whipped cream.

Tips

  • 💡 For a richer flavor, consider using dark molasses instead of light molasses.
  • 💡 You can add raisins or chopped nuts to the mixture for added texture and flavor.
  • 💡 This pudding can be made a day in advance and reheated in the oven before serving.
