- Firm tofu
- 14 oz, drained and pressed
- Olive oil
- 2 tablespoons
- Onion
- 1 medium, finely chopped
- Garlic
- 2 cloves, minced
- Ginger
- 1-inch piece, grated
- Ground turmeric
- 1/2 teaspoon
- Ground cumin
- 1 teaspoon
- Ground coriander
- 1 teaspoon
- Tomato
- 1 medium, diced
- Green peas
- 1/2 cup, fresh or frozen
- Salt

- Black pepper
- to taste
- Fresh coriander
- for garnish, chopped
Instructions
- Begin by draining and pressing the tofu to remove excess water—this will help the tofu absorb the flavors better.
- In a large skillet, heat the olive oil over medium heat. Once the oil is hot, add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.
- Next, add the minced garlic and grated ginger to the skillet, cooking for an additional minute until fragrant.
- Crumble the pressed tofu directly into the pan, breaking it up into smaller pieces. Stir in the ground turmeric, cumin, and coriander, mixing well to ensure the tofu is evenly coated with the spices.
- Add the diced tomato and green peas to the mixture, cooking for another 3-5 minutes until the peas are tender and everything is heated through.
- Season with salt and black pepper to taste, adjusting the flavors as needed.
- Finally, remove from heat and garnish with freshly chopped coriander before serving.
