Ingredients
- Mixed seafood (shrimp, calamari, mussels)
 - 1 pound, cleaned and deveined
 - Salt
 - to taste
 - Black pepper
 - to taste
 - Garlic
 - 2 cloves, minced
 - Extra virgin olive oil
 - 1/4 cup
 - Lemon juice
 - 3 tablespoons, freshly squeezed
 - Fresh parsley
 - 1/4 cup, chopped
 - Red onion
 - 1/2, thinly sliced
 - Cucumber
 - 1, diced
 - Cherry tomatoes
 - 1 cup, halved
 
Instructions
- Bring a large pot of salted water to a boil.
 - Add the mixed seafood to the boiling water and cook according to package instructions (about 3-5 minutes for shrimp and calamari, and 5-7 minutes for mussels). Drain and let cool completely.
 - In a large mixing bowl, combine the cooled seafood, halved cherry tomatoes, diced cucumber, sliced red onion, and chopped fresh parsley.
 - In a separate small bowl, whisk together the lemon juice, extra virgin olive oil, minced garlic, salt, and black pepper to create a zesty dressing.
 - Pour the dressing over the seafood mixture and gently toss to coat all ingredients evenly.
 - Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld beautifully.
 - Serve the Insalata di Mare chilled, garnished with additional parsley if desired.
