Insalata Russa (Russian Salad)

- 2 medium, peeled and diced Potatoes
- 2 medium, peeled and diced Carrots
- 1 cup Frozen peas
- 1 cup Mayonnaise
- to taste Salt
- to taste Black pepper
- 1/4 cup, finely chopped (for garnish) Fresh parsley

Instructions
- Place the diced potatoes and carrots in a large pot and cover with cold salted water. Bring to a boil over medium-high heat.
