Insalata Russa

Insalata Russa, also known as Russian Salad, is a traditional Italian appetizer made with diced boiled vegetables and mayonnaise.

Ingredients

  • Parsley (for garnish)
  • Salt and pepper (to taste)
  • Mayonnaise (1/2 cup)
  • Peas (1 cup, frozen)
  • Carrots (2 medium, peeled and diced)
  • Potatoes (2 medium, peeled and diced)

Instructions

  1. Place the diced potatoes and carrots in a large pot of salted water. Bring to a boil and cook until tender, about 15 minutes.
  2. Add the peas to the pot during the last 5 minutes of cooking.
  3. Drain the vegetables and let them cool completely.
  4. In a large bowl, combine the cooled vegetables and mayonnaise. Season with salt and pepper.
  5. Refrigerate the salad for at least 1 hour before serving.
  6. Garnish with parsley before serving.
