Ingredients

Potatoes
2 medium, peeled and diced
Carrots
2 medium, peeled and diced
Frozen peas
1 cup
Mayonnaise
1 cup
Salt
to taste
Black pepper
to taste
Fresh parsley
1/4 cup, finely chopped (for garnish)

Instructions

  1. Place the diced potatoes and carrots in a large pot and cover with cold salted water. Bring to a boil over medium-high heat.
  2. Once boiling, reduce the heat to medium and cook until the vegetables are tender, about 15 minutes.
  3. During the last 5 minutes of cooking, add the frozen peas to the pot. Drain the vegetables and let them cool completely in a colander.
  4. In a large mixing bowl, combine the cooled vegetables with the mayonnaise, stirring gently to coat. Season with salt and pepper to taste.
  5. Cover the bowl with plastic wrap and refrigerate the salad for at least 1 hour to allow the flavors to meld.
  6. Before serving, garnish with finely chopped parsley for a fresh touch.
