Ingredients

Potatoes
2 medium, peeled and diced
Carrots
2 medium, peeled and diced
Frozen peas
1 cup
Mayonnaise
1 cup
Salt
to taste
Black pepper
to taste
Fresh parsley
1/4 cup, finely chopped (for garnish)

Instructions

  1. Place the diced potatoes and carrots in a large pot and cover with cold salted water. Bring to a boil over medium-high heat.
