Ingredients
- Potatoes
- 2 medium, peeled and diced
- Carrots
- 2 medium, peeled and diced
- Frozen peas
- 1 cup
- Mayonnaise
- 1 cup
- Salt
- to taste
- Black pepper
- to taste
- Fresh parsley
- 1/4 cup, finely chopped (for garnish)
Instructions
- Place the diced potatoes and carrots in a large pot and cover with cold salted water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to medium and cook until the vegetables are tender, about 15 minutes.
- During the last 5 minutes of cooking, add the frozen peas to the pot. Drain the vegetables and let them cool completely in a colander.
- In a large mixing bowl, combine the cooled vegetables with the mayonnaise, stirring gently to coat. Season with salt and pepper to taste.
- Cover the bowl with plastic wrap and refrigerate the salad for at least 1 hour to allow the flavors to meld.
- Before serving, garnish with finely chopped parsley for a fresh touch.
