Instructions
- Thoroughly clean the pork intestines under running water, removing any impurities. Bring a pot of water to a boil and add the intestines. Boil for about 5 minutes to help cleanse them further. Drain and set aside.
- In a large pot, heat a splash of oil over medium heat. Add the minced garlic and sliced ginger, sautéing until fragrant, about 2 minutes.
- Add the cleaned pork intestines to the pot and stir-fry for 5-6 minutes, allowing them to brown slightly.
- Pour in the soy sauce and rice wine, then add the star anise and sugar. Cover the intestines with enough water, bringing it to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 2 hours, or until the intestines are tender and the broth is rich and flavorful.
- Meanwhile, cook the vermicelli noodles according to package instructions. Drain and set aside.
- Once the intestines are tender, taste the broth and adjust the salt as needed. Stir in the chopped green onions just before serving.
