Potatoes
4 medium, peeled and diced
Green peas
1 cup, fresh or frozen
Corn kernels
1 cup, fresh or frozen
Greens (e.g., kale, spinach)
2 cups, chopped
Butter
2 tablespoons
Garlic
2 cloves, minced
Onion
1 medium, finely chopped
Salt

Black pepper

Instructions

  1. In a large pot, bring salted water to a boil. Add the diced potatoes and cook until tender, about 15 minutes. Drain and set aside.
  2. In a separate pot, bring water to a boil and add the green peas and corn kernels. Cook until tender, about 5 minutes. Drain and set aside.
  3. In a skillet over medium heat, melt the butter. Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3-5 minutes.
  4. Add the chopped greens to the skillet and cook until wilted, stirring occasionally, about 3-4 minutes.
  5. In a large bowl, mash the cooked potatoes using a potato masher or fork until smooth.
  6. Fold in the cooked peas, corn, sautéed greens, onion, and garlic into the mashed potatoes. Mix well to combine all the ingredients.
  7. Season the mixture with salt and pepper to taste, ensuring the flavors are balanced.
