- 2 medium-sized, peeled and grated
- Flour
- 1 cup
- Buttermilk
- 1/2 cup
- Egg
- 1, beaten
- Salt
- 1/2 teaspoon
- Black pepper
- 1/4 teaspoon
- Butter
- 2 tablespoons
- Sour cream
- for serving
- Chives
- for garnish, chopped
Instructions
- Begin by placing the grated potatoes in a clean kitchen towel and wring out to squeeze any excess moisture. This will ensure your pancakes are crispy, not soggy.
- In a large bowl, combine the drained potatoes, flour, buttermilk, beaten egg, salt, and black pepper. Mix until the ingredients come together to form a thick batter.
- Next, heat a tablespoon of butter in a large skillet over medium heat. Once the butter is melted and hot, spoon the potato batter onto the skillet. Flatten the batter with the back of your spoon into pancake shapes.
- Cook the pancakes for about 3-4 minutes on each side, or until they turn a lovely golden brown and become crispy.
- Repeat this process with the remaining batter, adding more butter to the skillet as needed.
