Traditional Irish Colcannon

Ingredients
- 4 large, peeled and quartered Potatoes
- 1/2 head, chopped Cabbage
- 1/2 cup Butter
- 1/4 cup Milk
- 4, chopped Green onions
- 1 teaspoon or to taste Salt
- 1/2 teaspoon or to taste Black pepper

Instructions
- Place the quartered potatoes in a large pot and cover with salted water. Bring to a boil over high heat, then reduce to medium-low, cover, and simmer until tender, about 15 minutes.
- While the potatoes are boiling, bring a separate pot of water to a boil. Add cabbage and cook until tender, about 5 minutes. Drain well and set aside.
- Once potatoes are cooked, drain and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.
- Fold in the cooked cabbage and chopped green onions into the mashed potatoes, mixing until well combined.
- Serve hot as a side dish with your favorite main course. It pairs particularly well with corned beef or grilled sausages.

- For an even creamier Colcannon, use half-and-half instead of milk.
