Ingredients

Original recipe serves 6

Potatoes
4 large, peeled and quartered
Cabbage
1/2 head, chopped
Butter
1/2 cup
Milk
1/4 cup
Green onions
4, chopped
Salt
1 teaspoon or to taste
Black pepper
1/2 teaspoon or to taste

Instructions

  1. Place the quartered potatoes in a large pot and cover with salted water. Bring to a boil over high heat, then reduce to medium-low, cover, and simmer until tender, about 15 minutes.
  2. While the potatoes are boiling, bring a separate pot of water to a boil. Add cabbage and cook until tender, about 5 minutes. Drain well and set aside.
  3. Once potatoes are cooked, drain and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.
  4. Fold in the cooked cabbage and chopped green onions into the mashed potatoes, mixing until well combined.
  5. Serve hot as a side dish with your favorite main course. It pairs particularly well with corned beef or grilled sausages.

Tips

  • 💡 For an even creamier Colcannon, use half-and-half instead of milk.
  • 💡 You can also use kale or leeks instead of cabbage for a twist on the traditional recipe.
  • 💡 For an authentic Irish touch, make a well in the middle of each serving and add a knob of butter. Let it melt before eating.
