Irish Moss Drink

Ingredients
- Irish moss
- 1 cup, rinsed and soaked
- Water
- 4 cups
- Sweetened condensed milk
- 1 cup
- Vanilla extract
- 1 teaspoon
- Sugar
- 1/4 cup, adjust to taste
- Ground cinnamon
- 1/2 teaspoon
- Ground nutmeg
- 1/4 teaspoon
Instructions
- Rinse the Irish moss thoroughly under cold water to remove any sand or debris. Soak it in clean water for 15 minutes to soften.
- Drain the soaked moss and transfer it to a large pot. Add 4 cups of water and bring to a boil over medium heat. Once boiling, reduce the heat to low and let it simmer for 45 minutes, or until the moss is soft and the water has thickened to a gel-like consistency.
- Remove the pot from heat and allow the mixture to cool slightly. It should have a smooth, gel-like texture.
- In a blender, blend the cooled moss mixture until smooth and creamy.
- Return the blended mixture to the pot and stir in the sweetened condensed milk, vanilla extract, ground cinnamon, ground nutmeg, and sugar. Mix until well combined and the sugar has dissolved. Adjust sweetness as desired.
- Pour the Irish moss drink into a jug and refrigerate until chilled, allowing the flavors to meld together.
- Serve the Irish moss drink cold, over ice if desired, and enjoy the tropical refreshment!
