Traditional Irish Pancakes

Ingredients
- All-purpose flour
- 1 cup
- Sugar
- 2 tablespoons
- Baking powder
- 1 teaspoon
- Baking soda
- 1/2 teaspoon
- Salt
- 1/4 teaspoon
- Buttermilk
- 1 cup
- Egg
- 1, large
- Unsalted butter
- 2 tablespoons, melted (plus more for cooking)
Instructions
- In a large bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt until well combined.
- In a separate bowl, combine the buttermilk, egg, and melted butter. Whisk until smooth.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined. Avoid overmixing; a few lumps are perfectly fine.
- Heat a large skillet or griddle over medium heat and lightly grease it with additional butter.
- For each pancake, pour about 1/4 cup of batter onto the skillet. Cook for 2-3 minutes, or until bubbles form on the surface. Flip and cook for an additional 2-3 minutes until golden brown.
- Serve the pancakes warm with a pat of butter and a drizzle of maple syrup. Add fresh berries or a dusting of powdered sugar for an extra touch.
