Traditional Irish Boxty (Potato Pancakes)

Ingredients
- Russet Potatoes
- 2, large, peeled and grated
- Boiled Potatoes
- 2, medium-sized, mashed
- All-purpose Flour
- 1 cup
- Egg
- 1, large, beaten
- Salt
- 1 teaspoon or to taste
- Black Pepper
- 1/2 teaspoon or to taste
- Butter
- 4 tablespoons for frying
- Sour Cream
- 1 cup for serving
Instructions
- In a large bowl, combine the grated Russet potatoes and mashed boiled potatoes.
- Add the flour, beaten egg, salt, and black pepper to the potato mixture. Mix well until all the ingredients are thoroughly combined and the mixture forms a sticky batter.
- Heat 1 tablespoon of butter in a large skillet over medium heat. Once the butter has melted and is sizzling, you're ready to cook the pancakes.
- Drop heaped spoonfuls of the potato mixture onto the skillet, leaving enough space between each pancake. Flatten each mound with the back of your spatula to form a pancake shape.
- Cook each pancake for 3-4 minutes on each side, or until they turn a beautiful golden brown color. Add more butter to the pan as needed when flipping the pancakes.
- Once cooked, transfer the pancakes to a serving platter. Continue this process until all the batter is used.
