Ingredients

Russet Potatoes
2, large, peeled and grated
Boiled Potatoes
2, medium-sized, mashed
All-purpose Flour
1 cup
Egg
1, large, beaten
Salt
1 teaspoon or to taste
Black Pepper
1/2 teaspoon or to taste
Butter
4 tablespoons for frying
Sour Cream
1 cup for serving

Instructions

  1. In a large bowl, combine the grated Russet potatoes and mashed boiled potatoes.
  2. Add the flour, beaten egg, salt, and black pepper to the potato mixture. Mix well until all the ingredients are thoroughly combined and the mixture forms a sticky batter.
  3. Heat 1 tablespoon of butter in a large skillet over medium heat. Once the butter has melted and is sizzling, you're ready to cook the pancakes.
  4. Drop heaped spoonfuls of the potato mixture onto the skillet, leaving enough space between each pancake. Flatten each mound with the back of your spatula to form a pancake shape.
  5. Cook each pancake for 3-4 minutes on each side, or until they turn a beautiful golden brown color. Add more butter to the pan as needed when flipping the pancakes.
  6. Once cooked, transfer the pancakes to a serving platter. Continue this process until all the batter is used.
