Traditional Irish Boxty (Potato Pancakes)

Ingredients
- 2, large, peeled and grated Russet Potatoes
- 2, medium-sized, mashed Boiled Potatoes
- 1 cup All-purpose Flour
- 1, large, beaten Egg
- 1 teaspoon or to taste Salt
- 1/2 teaspoon or to taste Black Pepper
- 4 tablespoons for frying Butter
- 1 cup for serving Sour Cream

Instructions
- In a large bowl, combine the grated Russet potatoes and mashed boiled potatoes.
- Add the flour, beaten egg, salt, and black pepper to the potato mixture. Mix well until all the ingredients are thoroughly combined and the mixture forms a sticky batter.
- Heat 1 tablespoon of butter in a large skillet over medium heat. Once the butter has melted and is sizzling, you're ready to cook the pancakes.
- Drop heaped spoonfuls of the potato mixture onto the skillet, leaving enough space between each pancake. Flatten each mound with the back of your spatula to form a pancake shape.
