Ingredients

Chicken breasts
4, boneless and skinless
Olive oil
2 tablespoons
Garlic
4 cloves, minced
Canned diced tomatoes
1 (28-ounce) can
Fresh basil
1/2 cup, chopped
Parmesan cheese
1/2 cup, grated
Italian seasoning
2 teaspoons
Salt
1 teaspoon, or to taste
Black pepper
1/2 teaspoon, or to taste

Instructions

  1. Begin by seasoning the chicken breasts with Italian seasoning, salt, and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium heat. Once hot, add the seasoned chicken breasts and cook until they are browned on both sides, approximately 5 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 1 minute, or until fragrant, being careful not to burn it.
  4. Pour in the canned diced tomatoes along with their juices and add the chopped basil. Stir well and bring the sauce to a gentle simmer.
  5. Return the browned chicken breasts to the skillet, spooning the sauce over the top. Cover the skillet with a lid and let it simmer for 20 minutes, or until the chicken is cooked through and no longer pink in the center.
  6. Sprinkle the grated Parmesan cheese over the chicken and sauce. Cover the skillet again and allow the cheese to melt, about 3-5 minutes.
  7. Serve the chicken hot, generously spooning the tomato basil sauce over the top. For an extra touch, garnish with additional fresh basil.
