Italian Herbed Chicken in Tomato Basil Sauce

Instructions
- Begin by seasoning the chicken breasts with Italian seasoning, salt, and pepper on both sides.
- In a large skillet, heat the olive oil over medium heat. Once hot, add the seasoned chicken breasts and cook until they are browned on both sides, approximately 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute, or until fragrant, being careful not to burn it.
- Pour in the canned diced tomatoes along with their juices and add the chopped basil. Stir well and bring the sauce to a gentle simmer.
- Return the browned chicken breasts to the skillet, spooning the sauce over the top. Cover the skillet with a lid and let it simmer for 20 minutes, or until the chicken is cooked through and no longer pink in the center.
- Sprinkle the grated Parmesan cheese over the chicken and sauce. Cover the skillet again and allow the cheese to melt, about 3-5 minutes.
