Instructions
- In a large mixing bowl, combine the sliced peaches, sliced kiwi, and mixed berries. Gently toss the fruits to ensure an even distribution.
- In a separate small bowl, whisk together the Prosecco and honey until the honey is fully dissolved and the mixture is well combined.
- Pour the Prosecco dressing over the fruit mixture. Using a spatula or wooden spoon, gently toss the fruit to coat it evenly with the dressing, taking care not to mash the berries.
- Sprinkle the chopped mint leaves over the top of the fruit salad and give it one last gentle toss to incorporate the mint flavor.
- Serve the salad immediately for the freshest taste, or cover and refrigerate for up to 30 minutes to let the flavors meld before serving.
Tips
- For an added crunch, consider including some toasted nuts, such as almonds or walnuts.
- Feel free to mix in other seasonal fruits like watermelon or pineapple for variety.
- If you prefer a non-alcoholic version, substitute Prosecco with sparkling water or a lemon-lime soda.
