All-purpose flour
1 cup
Yogurt
1/4 cup
Water
1/2 cup (adjust as needed)
Sugar
1 cup
Cardamom powder
1/2 teaspoon
Saffron strands
1/4 teaspoon (soaked in 1 tablespoon warm water)
Vegetable oil
for deep frying
Water
1 cup (for sugar syrup)

Instructions

  1. In a mixing bowl, combine all-purpose flour, yogurt, water, sugar, cardamom powder, and saffron strands (with soaking water). Mix well to form a smooth batter.
  2. Cover the bowl with a clean cloth and let the batter ferment for 4-5 hours or overnight at room temperature.
  3. Once fermented, heat vegetable oil in a deep pan or kadai over medium heat.
  4. Pour the fermented batter into a squeeze bottle or a piping bag fitted with a small round tip.
  5. Squeeze the batter into the hot oil in a spiral shape, starting from the center and moving outward.
  6. Fry the jalebis until they turn golden brown and crispy, about 2-3 minutes. Remove them from the oil and drain excess oil on a paper towel.
  7. Dip the fried jalebis into the prepared sugar syrup for a few seconds, ensuring they are well coated.
  8. Serve the jalebis warm or at room temperature. Enjoy them on their own or with a scoop of vanilla ice cream for an indulgent treat.
