Jalebi

Ingredients
- 1 cup All-purpose flour
- 1/4 cup Yogurt
- 1/2 cup (adjust as needed) Water
- 1 cup Sugar
- 1/2 teaspoon Cardamom powder
- 1/4 teaspoon (soaked in 1 tablespoon warm water) Saffron strands
- for deep frying Vegetable oil
- 1 cup (for sugar syrup) Water

Instructions
- In a mixing bowl, combine all-purpose flour, yogurt, water, sugar, cardamom powder, and saffron strands (with soaking water). Mix well to form a smooth batter.
- Cover the bowl with a clean cloth and let the batter ferment for 4-5 hours or overnight at room temperature.
- Once fermented, heat vegetable oil in a deep pan or kadai over medium heat.
- Pour the fermented batter into a squeeze bottle or a piping bag fitted with a small round tip.
- Squeeze the batter into the hot oil in a spiral shape, starting from the center and moving outward.
- Fry the jalebis until they turn golden brown and crispy, about 2-3 minutes. Remove them from the oil and drain excess oil on a paper towel.
- Dip the fried jalebis into the prepared sugar syrup for a few seconds, ensuring they are well coated.
- Serve the jalebis warm or at room temperature. Enjoy them on their own or with a scoop of vanilla ice cream for an indulgent treat.
Tips
- For extra flavor, you can add a few drops of rose water to the sugar syrup.
