Original recipe serves 1 cup

Water
1/4 cup
Cornstarch
2 teaspoons
Ginger
1 tablespoon, freshly grated
Garlic
2 cloves, minced
Brown sugar
1/4 cup
Sake
1/4 cup
Mirin
1/4 cup
Soy sauce
1/2 cup

Instructions

  1. In a small saucepan, combine the soy sauce, mirin, sake, brown sugar, minced garlic, and freshly grated ginger.
  2. Bring the mixture to a simmer over medium heat. Stir occasionally until the sugar is fully dissolved.
  3. In a separate bowl, whisk together the cornstarch and water until a smooth consistency is achieved. This will serve as your thickening agent.
  4. Slowly pour the cornstarch mixture into the saucepan while stirring constantly to prevent lumps.
  5. Continue to cook the sauce over medium heat for about 2-3 minutes, or until it thickens to your desired consistency.
  6. Remove the sauce from the heat and let it cool before using it to marinate, glaze, or dip your favorite dishes.
  7. Store any leftover sauce in an airtight container in the refrigerator for up to one week.
