  • Brown sugar (1 tablespoon)
  • Garlic (2 cloves, minced)
  • Ginger (1 tablespoon, grated)
  • Vegetable oil (1 tablespoon, plus more for brushing)
  • Tortillas (4 large, soft tortillas)
  • Bell peppers (1 cup, sliced (any color))
  • Red onion (1/2 cup, thinly sliced)
  • Green onions (1/4 cup, sliced)
  • Sesame seeds (2 tablespoons, toasted)

Instructions

  1. In a medium bowl, whisk together the soy sauce, mirin, sake, brown sugar, minced garlic, and grated ginger to create a flavorful marinade.
  2. Add the chicken pieces to the marinade, ensuring they are well-coated. Cover and let marinate for at least 15 minutes, or up to 2 hours for more enhanced flavor.
  3. Preheat your grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Thread the marinated chicken pieces onto the skewers. Lightly brush them with vegetable oil to prevent sticking.
