Japchae Stir Fry
Japchae, a beloved Korean dish, is a vibrant stir-fry that showcases the unique flavors and textures of sweet potato glass noodles tossed with marinated beef and a colorful medley of vegetables. Traditionally served during special occasions, its name literally means 'mixed vegetables.' Ingredients
- 8 ounces Sweet potato glass noodles
- 8 ounces, thinly sliced Beef sirloin
- 3 tablespoons Soy sauce
- 2 tablespoons Sesame oil
- 1 tablespoon Sugar
- 3 cloves, minced Garlic
- 2 tablespoons Vegetable oil
- 1 cup, julienned Carrots
- 2 cups, fresh Spinach
- 1 cup, sliced (any color) Bell pepper
- 1 medium, thinly sliced Onion
- 1 cup, sliced (shiitake or button) Mushrooms
- to taste Salt
- to taste Black pepper
- 2, chopped (for garnish) Green onions
- for garnish Toasted sesame seeds

Instructions
- Cook the sweet potato glass noodles according to package instructions. Drain and rinse under cold water to prevent sticking. Set aside.
- In a medium bowl, combine the sliced beef, soy sauce, sesame oil, sugar, and minced garlic. Mix well and let marinate for 10 minutes.
- Heat vegetable oil in a large pan or wok over medium-high heat. Once hot, add the marinated beef and stir-fry until fully cooked, about 3-4 minutes. Remove the beef from the pan and set aside.
- In the same pan, add more vegetable oil if necessary. Stir-fry the julienned carrots, spinach, sliced bell pepper, onion, and mushrooms for about 5-7 minutes or until tender yet crisp.
- Add the cooked glass noodles and the stir-fried beef back to the pan. Toss everything together and stir-fry for an additional 2-3 minutes to combine the ingredients thoroughly.
- Season with salt and black pepper to taste, adjusting according to your preference.
- Remove from heat and garnish with chopped green onions and toasted sesame seeds before serving.
