Korean Jeon (Savory Pancakes)

Ingredients
- 1 cup All-purpose flour

- 1 medium, thinly sliced Zucchini
- 3, chopped Green onions
- 1/4 cup (for dipping) Soy sauce

Instructions
- In a mixing bowl, combine the all-purpose flour, water, egg, and salt. Whisk together until the batter is smooth and free of lumps.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of vegetable oil.
- Pour a ladleful of the batter onto the skillet and spread it evenly to form a thin pancake, about 6 inches in diameter.
- Arrange a few slices of zucchini, green onions, and a handful of shrimp on top of the pancake.
- Cook for 2-3 minutes, or until the bottom is golden brown and the shrimp is starting to turn pink.
- Carefully flip the pancake and cook for another 2-3 minutes, or until the other side is golden brown and the shrimp is cooked through.
- Transfer the cooked pancake to a plate and repeat the process with the remaining batter and ingredients, adding more oil to the skillet as needed.
- Cut the pancakes into bite-sized pieces and serve warm with soy sauce for dipping.
