Ingredients

All-purpose flour
1 cup
Water
3/4 cup
Egg
1 large
Salt
1/2 teaspoon
Vegetable oil
2 tablespoons (for frying)
Shrimp
1 cup, peeled and deveined
Zucchini
1 medium, thinly sliced
Green onions
3, chopped
Soy sauce
1/4 cup (for dipping)

Instructions

  1. In a mixing bowl, combine the all-purpose flour, water, egg, and salt. Whisk together until the batter is smooth and free of lumps.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon of vegetable oil.
  3. Pour a ladleful of the batter onto the skillet and spread it evenly to form a thin pancake, about 6 inches in diameter.
  4. Arrange a few slices of zucchini, green onions, and a handful of shrimp on top of the pancake.
  5. Cook for 2-3 minutes, or until the bottom is golden brown and the shrimp is starting to turn pink.
  6. Carefully flip the pancake and cook for another 2-3 minutes, or until the other side is golden brown and the shrimp is cooked through.
  7. Transfer the cooked pancake to a plate and repeat the process with the remaining batter and ingredients, adding more oil to the skillet as needed.
  8. Cut the pancakes into bite-sized pieces and serve warm with soy sauce for dipping.
