Ingredients

Green plantains
2, peeled and cut in half
Oil
for frying
Salt
to taste
Black pepper
to taste
Garlic powder
1 teaspoon
Steak (such as flank or sirloin)
1 lb, sliced thin
Mayonnaise
1/4 cup
Cheese (such as Swiss or provolone)
4 slices
Lettuce
1 cup, shredded
Tomato
1, sliced

Instructions

  1. Peel the plantains and cut them in half lengthwise. Flatten each half using a kitchen mallet or the bottom of a heavy pan until they are about 1/2 inch thick.
  2. Heat enough oil in a frying pan over medium heat to cover the bottom. Fry the flattened plantains for about 3-4 minutes on each side, or until they are golden brown and crispy. Once done, set them aside on a paper towel to drain excess oil.
  3. Season the steak with garlic powder, salt, and pepper. In the same pan, cook the steak over medium-high heat until browned and cooked to your desired level of doneness, about 3-5 minutes per side for medium-rare. Remove from heat and allow to rest for a few minutes before slicing.
  4. Spread mayonnaise evenly on one side of each fried plantain.
  5. Layer the steak, cheese, lettuce, and tomato on top of the mayonnaise on one plantain half. Place the other half on top, mayonnaise side down, to form a sandwich.
  6. Serve the Jibarito sandwich hot, with additional toppings or dipping sauces if desired.
