Instructions
- Peel the plantains and cut them in half lengthwise. Flatten each half using a kitchen mallet or the bottom of a heavy pan until they are about 1/2 inch thick.
- Heat enough oil in a frying pan over medium heat to cover the bottom. Fry the flattened plantains for about 3-4 minutes on each side, or until they are golden brown and crispy. Once done, set them aside on a paper towel to drain excess oil.
- Season the steak with garlic powder, salt, and pepper. In the same pan, cook the steak over medium-high heat until browned and cooked to your desired level of doneness, about 3-5 minutes per side for medium-rare. Remove from heat and allow to rest for a few minutes before slicing.
- Spread mayonnaise evenly on one side of each fried plantain.
- Layer the steak, cheese, lettuce, and tomato on top of the mayonnaise on one plantain half. Place the other half on top, mayonnaise side down, to form a sandwich.
- Serve the Jibarito sandwich hot, with additional toppings or dipping sauces if desired.
