
Jicama and Black Bean Salad
This refreshing and nutritious salad combines jicama, black beans, and a zesty lime dressing.
Ingredients
- Black pepper (1/4 teaspoon)
- Salt (1/2 teaspoon)
- Cumin (1/2 teaspoon)
- Olive oil (2 tablespoons)
- Lime juice (2 tablespoons)
- Red onion (1/4 cup, thinly sliced)
- Cilantro (1/4 cup, chopped)
- Red bell pepper (1, diced)
- Black beans (1 can, rinsed and drained)
- Jicama (1 medium, peeled and julienned)
Instructions
- In a large bowl, combine the jicama, black beans, red bell pepper, cilantro, and red onion.
- In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and black pepper.
- Pour the dressing over the salad and toss to combine.
- Refrigerate for at least 30 minutes to allow the flavors to meld.
