- Jicama
- 1 cup, peeled and julienned
- Cucumber
- 1 cup, diced
- Carrot
- 1 medium, grated
- Fresh cilantro leaves
- 1/4 cup, chopped
- Fresh mint leaves
- 1/4 cup, chopped
- Sesame oil
- 2 tablespoons
- Honey
- 1 tablespoon
- Fish sauce
- 1 tablespoon
- Lime juice
- 2 tablespoons
Instructions
- Begin by cooking the chicken breasts. You can poach, grill, or bake them until fully cooked, about 15-20 minutes depending on the method. Once cooled, shred the chicken into bite-sized pieces using two forks or your hands.
- In a large mixing bowl, combine the shredded chicken, jicama, grated carrot, diced cucumber, chopped mint, and chopped cilantro. Gently toss to combine and set aside.
