Servings: 4

Ingredients

Lettuce leaves
1 head, preferably butter or romaine
Chicken breast
2, boneless and skinless
Jicama
1 cup, peeled and julienned
Cucumber
1 cup, diced
Carrot
1 medium, grated
Fresh cilantro leaves
1/4 cup, chopped
Fresh mint leaves
1/4 cup, chopped
Sesame oil
2 tablespoons
Honey
1 tablespoon
Fish sauce
1 tablespoon
Lime juice
2 tablespoons

Instructions

  1. Begin by cooking the chicken breasts. You can poach, grill, or bake them until fully cooked, about 15-20 minutes depending on the method. Once cooled, shred the chicken into bite-sized pieces using two forks or your hands.
  2. In a large mixing bowl, combine the shredded chicken, jicama, grated carrot, diced cucumber, chopped mint, and chopped cilantro. Gently toss to combine and set aside.
  3. In a separate small bowl, whisk together the lime juice, fish sauce, honey, and sesame oil until well blended. This zesty dressing will enhance the freshness of your wraps.
  4. Pour the dressing over the chicken and vegetable mixture, and toss gently to ensure everything is evenly coated with the dressing.
  5. Carefully separate the lettuce leaves, wash them under cold water, and dry them thoroughly. These leaves will serve as your wrap base.
  6. Place a generous spoonful of the filling onto each lettuce leaf, then roll the leaf around the filling tightly, folding in the sides for easier handling.
  7. Serve immediately as an appetizer or light meal. Enjoy the delicious burst of flavors and textures in every bite!
